Happy Monday everyone! I’m so excited to share my first vegan and gluten-free recipe with you all. Every Monday is Meatless Monday for me, so for the whole day, I eat only plant-based meals. My diet overall consists of mostly plant-based and dairy-free meals, and let me tell you there are so many yummy meal options!
I made this dish with all organic vegetables from Whole Foods, this is where I typically buy all my produce if I haven’t gone to Trader Joe’s. For all of my organic pantry items, I shop at Thrive Market. I HIGHLY recommend subscribing to Thrive if you usually shop at Whole Foods for snacks, pasta, oils, baking goods, supplements and so much more. I promise it will save you a ton of money!
This Veggie Alfredo Pasta Bowl is healthy, vegan, and gluten-free. It is packed with nutrients and is extremely filling which makes it perfect for days that you’re not eating meat-based proteins.

Cook Time 30 minutes
Servings 1- 2
Veggie Alfredo Pasta Bowl
|◦ 2 oz Banza Chickpea Pasta (one serving)|
◦ 2 teaspoons avocado oil
◦ 1/4 white onion, chopped into half-moon pieces
◦ 2 cloves of garlic, minced
◦ 1/4 teaspoon salt (or to taste)
◦ 1/4 teaspoon pepper (or to taste)
◦ 4 oz organic baby bella mushrooms, sliced
◦ 1 medium organic zucchini, sliced in halves
◦ 2 cups organic baby spinach
◦ 1/4 cup Primal Kitchen No Dairy Alfredo Sauce
◦ 5 stalks organic broccolini
|1. Put 2 cups of water to boil. Add salt to water.|
|2. Chop white onion; slice mushrooms and zucchini, mince garlic.|
|3. Heat 1 teaspoon of avocado oil in a large pan on medium heat.|
|4. Add garlic, onion, mushrooms, and zucchini into pan. Season with salt, pepper and garlic powder.|
|5. Cook veggies until light brown in color, add spinach and stir. Turn heat to low.|
|6. In a separate pan, on low-medium heat 1 teaspoon of avocado oil and add broccolini.|
|7. Cook pasta according to directions on the box once water is boiled.|
|8. Drain pasta and add to pan with veggies, then mix in Alfredo sauce.|
|9. Flip broccolini and cook until stems are browned and stems have softened.|
|10. Place pasta and broccolini on a place and ENJOY!|
